I have this interesting story about mushrooms. Growing up I would never imagine it would become one of my favorite vegetables of all times. Even in my twenties, I would eat all sorts of vegetables, but for some reason, mushrooms were not included in the list. It had something to do with the texture (or at least that’s what I used to tell myself). One day about 4 years ago I tried them again, and I fell in love. Mushrooms became my new favorite vegetables, and now I eat them almost every day.
The interesting thing about this specific recipe is that one time I prepared them for my parents, and they both loved it. So simple, and so tasty. My mom said: it is interesting that I never thought of buying mushrooms for our home when you were growing up. My dad was surprised at the simplicity and time it took to prepare them. They both in a way were transformed that day and now mushrooms make it to their weekly shopping list.
