Veggie Chips Recipe

One of my favorite things I like to cook at home is healthy snacks. I snack ALL THE TIME! And what has happened in the past is that when I got to the supermarket and pick up something I think is a healthy snack, it ends up having either too much oil, added sugars, too much sodium or even preservatives. Being a bit frustrated by this I just end up making them on my own, hence these veggie chips.
When you cook at home, you know what you are putting into your food and in this case into your snacks. Today I’m combining one of the most popular snacks in the US, potato chips, with other veggies like red and yellow beets. They all can be made at home from fresh ingredients that you pick up that day at your local farmer’s market or your regular supermarket.
My trick is to make a ton of snacks, usually on Sundays, when I have a bit more time. You can cook a lot of different things in the oven at the same temperature, and when I am making food and snacks in the oven, I am usually multitasking and cooking something else on the stove. And with certain tools at home, you can definitely enjoy eating more vegetables in a really simple way. For example using a mandoline slicer can save you a ton of time and help you chop and slice a ton of vegetables to cook or eat as snacks during the week. These veggie chips will take you about 50 minutes to an hour until they are done. I added a bit of oil and salt, but if you want to make them oil free, you can use a combination of water, lime juice and maybe a bit of soy or tamari sauce.
The prepping time is super quick, what takes the longest is the baking time, as with most things you bake. So go ahead and try making this snack at home and tell me what you think!

Instructions
  1. Wash all the veggies
  2. Cut each vegetable in very thin slices, or use a mandoline to make sure your slices are really thin
  3. Preheat the oven to 350degF
  4. On a baking sheet, cover with baking sheet with baking paper and add the pile of veggies slices on it (notice I keep the peel on all the vegetables)
  5. Pour the teaspoon of oil and add salt to taste
  6. Mix well and spread the slices throughout the baking sheet (you may need to use more than one baking sheet depending on the size)
  7. Bake one side for 20 minutes
  8. Take out of the oven, flip the slices and cook on the other side
  9. Bake the other side for 20 minutes. Turn off the oven and let the chips rest for 10-15 minutes inside the oven
  10. Take out, serve and enjoy!
