Today’s recipe is a refreshing radish kale salad. I love eating radishes, especially in the summer, not only because I find the color and texture really appealing but for 3 other important reasons. Did you know that radishes actually help you stay hydrated and cool down a bit because of its high water content? Yup, but the good and fun part of radishes doesn’t stop there. They are also high in Vitamin C which is always good to consume from natural sources, and it is another vegetable that is high in fiber, which is great for your body and your energy. All of those

Since I’ve been also trying to reduce my oil intake due to my slightly high cholesterol (my doctor will be checking up on that soon), I seasoned this salad with some refreshing lime juice, no oils, not even olive oil.

Radish Kale Salad
Radishes are extremely good for you, especially in the summer months. They keep you hydrated and the high fiber content is great for your health. This recipe shows you how to use 2 super foods (radishes and kale) to make a delicious and refreshing salad.
Remove the stem from the kale. The stem is usually bitter, so we want to use only the leaf for this recipe
Cut the ends of the radishes. Using a cheese grater shred the radishes
Add the vegetables in a bowl and squeeze the half lime
Add salt and pepper to taste and mix all the ingredients. Enjoy!
