Radish and Kale Salad

Today’s recipe is a refreshing radish kale salad. I love eating radishes, especially in the summer, not only because I find the color and texture really appealing but for 3 other important reasons. Did you know that radishes actually help you stay hydrated and cool down a bit because of its high water content? Yup, but the good and fun part of radishes doesn’t stop there. They are also high in Vitamin C which is always good to consume from natural sources, and it is another vegetable that is high in fiber, which is great for your body and your energy. All of those

All of those sound like win-win to me.

Since I’ve been also trying to reduce my oil intake due to my slightly high cholesterol (my doctor will be checking up on that soon), I seasoned this salad with some refreshing lime juice, no oils, not even olive oil.
By the way, if you are interested in talking about creating healthy habits, I still have a few spots open for the 30-minute conversation, so feel free to find a convenient time and let’s talk!
