You guys I’m so excited! I’ve been wanting to make this recipe for a few months now and lately I have been obsessed with cooking sweet potatoes and trying out different recipes with them.
This is such a great recipe when you are meal prepping or meal planning because you can bake a ton of sweet potatoes at the same time and then if you make a bunch of different beans you can mix it up. You stuff the sweet potatoes in just a few minutes and you will have a guilt-free, oil-free loaded sweet potato recipe.
As you know, I am a fan of sweet potatoes because not only do they keep you full for longer but they have a lot of fiber and a lot of vitamins and minerals that are great for your health.
I recommend preparing this recipe over the weekend because it takes a little longer than usual due to the baking step. So if you come home starving from work or school you don’t have to wait to bake the sweet potatoes. I recommend making them in batches and add it to your favorite meal planning recipe.
Another great feature of this recipe is that it’s 100% oil-free, plant-based, gluten-free, and it has zero nuts so it is really great for those who suffer from food allergies. It’s a good alternative and good meal to have.
