Fall is here!
Ready to enjoy some warm apple cider and go pumpkin picking?
But wait, what are you going to do with all the leftover veggies from your summer garden?
Take a deep breath, because I have some great tips and creative ideas on what you can do.
Receiving a bright red, juicy, slightly sweet tomato to bring home always makes me super happy, so my favorite option is sharing your crops with others. When you have more vegetables than you know what to do with, bring some to the office and share it with your co-workers.
Love having friends and family over? Then this is option # 2. Invite a few helping hands and share some of your delicious produce cooked into your favorite dishes, everyone will enjoy coming over and eating the fresh bell peppers or tasting that corn salad made with the corn you grew right there in your backyard.
Was your garden way too big that even if you invite friends and family you still have leftover vegetables?
Your freezer is your best friend. Option 3 is to do some meal prepping with the vegetables and freeze. Yes, it does take time (hence why my favorite is option 1), but in the long run it will make your life a lot easier.
Prepare big batches of tomato soup, or zucchini soup and freeze it in individual containers. In a few months, when winter is at its peak, you will certainly enjoy warming up some soup in just a few minutes.
Love Potlucks? I do!
Ask your friends who love to cook to come on over and pick up a few ingredients for the next scheduled potluck. This will certainly bring lots of joy to everyone because let’s be honest: who doesn’t enjoy good food and great company?
Sitting around the table, sharing recipes and stories, while tasting some decadent foods is what I call my happy place.
What do you think? Doesn’t this sound fun?
